The name of a Dairy Crest owned creamery in Cornwall that has been making award-winning cheese for over 50 years. It is perched high on the Cornish moors and gives its name to a range of mature Cheddars which have a characteristic sweet nutty flavour. Davidstow is also home to the Cathedral City brand of Cheddar - the biggest brand in the UK.

Various supermarket own label mature Cheddars are also made there including Cornish Crackler, Cornish Cove and Cornish Cruncher.Because some of these variants are matured for 18 months or more they may contain crunchy pieces of calcium lactate crystals - a naturally forming product of the maturation process - which helps to give the cheese its special flavour.
